Instructions

1. Turn on the oven and preheat it to 375 degrees Fahrenheit.

2. Wash the chicken breasts under cool running water, paying particular attention to the small bones along the backbone. Remove any pinfeathers from the breast that may be present. When the chicken's feathers are removed small pinfeathers are sometimes left behind. These pinfeathers are easily recognizable as tiny feathers and are usually found on the chicken wings but are found everywhere on the bird. Pull the pinfeathers out with your fingers.

3. Cut away excess fat or skin, leaving the skin covering the breast intact.

4. Baste the breast liberally with melted butter and season to taste with salt, pepper and other favorite seasonings.

5. Place the breast in a small roasting pan or bowl that has been treated with non-stick spray.

6. Pour approximately one 1/4 inch of chicken broth into the roasting pan.

7. Slide the pan uncovered into the oven on the middle rack and roast for approximately 15 to 20 minutes, or until the temperature reaches 180 degrees Fahrenheit as measured by a digital stem thermometer inserted into the thickest part of the breast.

8. Remove the breast from the oven, baste with chicken broth and enjoy.
